The ONLY Tomato Soup...

I can't think of anything better than hot soup and warm toasty sandwiches on a cold day! So I thought I would share with you my favorite tomato soup recipe! I adapted it from a Southern Living recipe in their October 2010 edition... their recipe looks amazing, but I'm not a fan of buying fresh herbs. I end up wasting a bunch of it! (I will hopefully have an herb garden this summer...) The recipe yielded a TON of soup, too! With two people eating the soup, it would have taken us eating it every day for a week to finish it! All of that said, I put together a recipe similar to theirs and just as tasty, in my opinion! The best thing about this recipe is it's very customizable. Depending on your preferences you can add more of anything (chicken broth, seasoning, honey...), and it still tastes great! Soup is so easy to make; you almost can't go wrong!
Ingredients:
1/2 onion, diced
1 Tbsp. olive oil
1 25 oz. can Diced tomatoes with basil, garlic, and oregano
1/2 cup chicken broth (give or take)
1 tsp.-1 Tbsp. Italian seasoning
1 tsp. lemon juice
1 Tbsp. honey
1 clove of garlic, minced (about 1/2 tsp. of minced garlic in a jar)
salt and pepper to taste

First, I dice up half an onion while I heat up the olive oil over med./high heat in a large pot. Side-note: I love my Kitchen Aid chopper so much! Kyle surprised me with it a few months ago because I was having a bad day! My spirits were lifted, and he knew I would be pretty excited to make him a tasty meal! :)
Stir the onions around a little bit, and let them cook until tender. I didn't do it this time, but you could also throw the garlic in with the onions. Just be careful to not burn the garlic!
-Once the onions are tender, dump the whole can of tomatoes (juice and all) into the pot.
-Decide at this point how thick you want your soup to be. The more chicken broth you put in, the thinner your soup will be. I added more chicken broth than I wanted to so I opened a small can of plain diced tomatoes and dumped them in. (It wouldn't be a bad idea to swish the chicken broth around your empty seasoned tomato can to make sure you get ALL that seasoned goodness! )
-Now you will bring the tomatoes, chicken broth, and onions to a boil.
-Once the mixture reaches a boil, turn the heat down and let it simmer for about 20 minutes. Stir occasionally.
-Pull out your blender, and get ready to make a little bit of a mess. You will need to take the stopper out of the top of the blender lid to avoid exploding tomato soup all over the kitchen. (I'm speaking from experience...)
-I couldn't fit all of the soup into my blender at once so I poured half of the soup into the blender and pulsed it 3 or 4 times.
-You can either dump it back into the pot with the rest of the soup and leave the texture alone (leaving bigger chunks of tomato), or like I did you can switch out the batches and blend the rest of the soup.
-Next, you add in the Italian seasoning, lemon juice, honey, garlic (if you didn't saute it with the onions), salt, and pepper. (All of these ingredients can be increased or decreased depending on your preferences!)
Tomato Soup is served! Southern Living suggests serving it with fried okra and grilled pimiento cheese sandwiches. (The okra tastes great in it!) I have thought about adding a little bit of sausage, tortellini, and parmesan to a batch... but we usually eat it sprinkled with parmesan with grilled turkey and swiss sandwiches on the side. No matter how you choose to eat it, it's definitely better than plain ole' canned tomato soup!!

A Cup of Cocoa and Some Snow...

Whad'ya know? The weathermen were right this time! I usually doubt the snow predictions at first...but 'twas true this time. Oxford got 9 inches of powdery, white snow! It really is gorgeous outside!
Kyle isn't really into sweets or hot drinks so when he suggested hot chocolate, I jumped at the opportunity to make us a fun drink for a cold and snowy day! I used a simple homemade hot chocolate recipe from one of my favorite blogs Our Best Bites. I made the Caramel Fudge hot chocolate, and it was AMAZING! I had a little heavy whipping cream in the fridge so I "whipped" some up, topped the chocolatey-goodness with it, and sprinkled it with a little cocoa to make it look pretty!
Speaking of good recipes, you should definitely browse around Our Best Bites for some good stuff... it's definitely my go-to place for tasty (and easy) recipes! Just a few that we've tried and loved: cheesy garlic bread swirls, peanut butter bars (they taste exactly like Reese's!), roasted red pepper dip, fruit salsa with fresh baked cinnamon chips, tortellini sausage soup, and SO many more...I really could go on and on...but check them out yourself! You will LOVE so many of their recipes! (P.S. They have a cookbook coming out in February!)

A New Year...New Projects!

I have decided to document my Project List for 2011...I would LOVE input...but I also didn't want to forget all the plans I have for my home this year! I highly doubt all these projects will actually be done, but I would love to have a list to work from!

Master Bedroom:
-I have been wanting to paint horizontal stripes in my bedroom for a while now. I love the color of our walls NOW (which is pretty close to the darker color in the picture), but I think it would add a little more character with slightly lighter thick horizontal stripes.
-I recently found Kojo Designs through another blog I follow...and I'm so glad I did! I'm in love with this bedspread they made! Can you believe it?? It's an Anthro-inspired "quilt" (Check out the inspiration quilt from Anthropologie), and it's pretty dead-on. I can't stop dreaming about it being in my bedroom! This is one of the first projects I want to tackle
- I also love those stands on her bedside table with the initials on them. I'm going to try to make something similar...
-I need a curtain on my one measly little window...we'll see what I can do...
-I also need to figure out what to put on the wall above our bed. I thought possibly some silhouette pictures of Kyle and I... or art...what do you think?

Parker's Bedroom:
-I just realized how terrible this photo is...but that little bed is AWESOME! My talented husband made it! He used the plans from Ana White's website (she is pretty amazing). I need to paint and distress it...
-Here's another blog I follow! (The picture above is from her First Day of Fall post...) I really want to make a floating shelf to put above Parker's dresser. I need a place to display all of his little picture frames and knick-knacks. He is getting big enough to pull things down from his dresser, and I don't want to have to hide everything!
-I've decided Parker's room needs to be green! Maybe an olive-y green... not bright. I also want to paint cattail silhouettes coming up from behind the long side of Parker's bed on the wall...maybe a cream color.
-Many will probably think it's dumb, but I thought I would win some points with Kyle for this. I am going to attempt to make one to put above Parker's bed! We constantly have cardboard boxes building up in our garage so I thought I would make use out them!
-Parker also needs a curtain...
-Kyle is going to make me a framed chalkboard to hang in Parker's room.

Master Bath:
-Kyle is actually in the process of making this Spa Bench right now! I'm thinking I like it exactly how it looks in the picture so we will stain it when it's done! (Another Ana White
-I would also love to mount some hooks on the wall above my bench to continue the spa look!
-I found this blog and immediately fell in love with the mirror she created!! And it's pretty easy to do! This is another that I would love to tackle soon! (You should also check out her laundry room re-d0!)
- I love the ruffled and bustled shower curtains Anthropologie sells! I would LOVE this in my bathroom!

Living Room:
-Right now, this is what one of my walls looks like in the living room. Plain, brown, boring. I like have a mirror in there to expand it a little, but it needs to be fixed up a little! I'm thinking spray-painted a creamy color and distressed a little...what about the sconces?? I'm not sure what I think about them...
-I have a tiny little wall the the left when you walk inside my front door that I would like to make into a faux mini mudroom. Ana White has plans for the above photo, and Kyle said he would make it for me!!
-Another Ana White creation! I love this upholstered bench! I could use more sitting space in my living room...and I need to cover an ugly grate on a wall in my living room!
-I have a great bamboo Roman shade on my front door right now...but if the lights are on inside the house anyone can see right through them! I want to figure out how to attach some cute curtains to them to add a little more privacy. Anyone else have this problem with their bamboo shades?

Kitchen:
-My kitchen and I are on good terms right now...I'm content with most of that part of my house, but I'd like to make a little curtain like the curtain above from Urban Outfitters. (I realize that's a shower curtain...but I want it in my kitchen!!)
-I also want to paint my kitchen stools green and distress them! I need a little more color around my "kitchen table".

Laundry Room:
-Not sure where I got the idea for this, but I KNOW I was inspired by something I saw... I had some extra wood in the garage so I decided to make some little signs that say "wash", "dry", "fold" for my laundry room! Obviously I've not made it all the way through this project, but I love how the "wash" sign turned out! These are just in case I forget the order... :)

Well, there you have it. A project list for the new year! I'm not holding myself to these projects, but I need to document them so I don't forget what I'd like to do! Hopefully I can take pictures of the process, and I will share them with you!!

R+J Handmade

I am TERRIBLE about blogging...I did not get the "high-tech" genes I should have from my dad... so I am living my life struggling with even loading pictures onto Facebook. Aren't I supposed to be good at that sort of thing?? I'm not... so any free lessons are welcome!

With that said, I am going to attempt to keep up with the goings-on of my family and my sister's and my new Etsy shop R+J Handmade. I have to give my sister, Roxanne, most of the credit for this Etsy shop and our recent success in a "Holiday Shopping Party" a great friend, Whitney, hosted for a group of aspiring "business women" like ourselves. We had a great time hanging out, seeing old friends, and meeting new ones! I didn't take any pictures of the amazing event, but I did want to make a plug for some of my handmade products! :) Some of these are still available in our shop, but let me know if you do not see the items you like! I accept custom orders!






Don't forget that a huge part of R+J Handmade is ROXANNE! She makes the cutest hand towels and distressed picture frames!

Holiday Cards!

'Tis the season...for HOLIDAY CARDS! I can't wait to receive and send out these special cards. I love the simplicity of a current family picture and a Holiday greeting! I need some help deciding, though... which is YOUR favorite?? Shutterfly has so many different options that I can't decide on my own! (I may even order a personalized mug or wall calendar, too!) I could see my family's picture on ANY of these Christmas cards...















Maybe I'll get them all! :) Let me know what YOU like... maybe I can make a decision from there!

Purple Shoes.

I thought I could show you a little bit of what I get to do during naptime...mind you, I am not usually this productive (or unproductive...depending on how you look at it...). I also have loads and loads of laundry looming over me. It's pretty bad when your husband has to search high and low for a clean shirt. Anyway, on to today's project!!

I can't tell you how many times I have swooned over fun, colorful shoes only to pass them by to look for the more practical colors...I can't tell you how many pairs of black and brown shoes I have in my closet!! NO MORE, I tell you! I decided PURPLE is calling my name. Here's what you need:
A pair of black heels (or flats...) - Mine are from Target, 3 or 4 years ago
Paint - "Violet-Pansy" from Wal-Mart craft section
Mod Podge - Wal-Mart or craft store (I used Matte finish, but I think Glossy would be great, too!)
Paint Brush
I painted 3 coats of purple paint. (You could do more, but I was worried that more paint would mean more to scratch off.) I let each coat dry for at least 30 minutes before continuing. I didn't use any painters tape, but I did have to occasionally wipe the excess paint off the part of the sole that shows. That was pretty easy to clean up. If it drys, it's pretty simple to scratch off!
Once the paint is dry, grab your Mod Podge and paint a good layer. Remember that even though the Mod Podge dries clear, the texture stays. I wanted my strokes to look pretty uniform so I was careful to paint in the same direction.
Once the Mod Podge dries, you're done!! You basically have a new pair of shoes!
I have also made a "statement" necklace to wear with these shoes from scraps of fabric and buttons. I will try to post a picture and a "how-to" soon!
